Parmesan Zucchini Rounds

A HelloFresh recipe. Recommended with Creamy Lemon Butter Chicken and Scallion Couscous.

Ingredients

  • 1 zucchini
  • Olive oil
  • 1/2 tsp dried basil
  • 1/4 tsp dried rosemary
  • 1/4 tsp dried oregano
  • 1/4 tsp garlic powder
  • 1/8 tsp cayenne
  • 1/8 tsp ground fennel
  • Salt and pepper, to taste
  • 1/4 cup Panko
  • 1/4 cup Parmesan cheese

Directions

  1. Adjust rack to top position and preheat oven to 450°. Trim and slice zucchini crosswise in 1/2" thick rounds.
  2. Place zucchini on a baking sheet with a large drizzle of olive oil, basil, rosemary, oregano, garlic powder, cayenne, fennel, salt and pepper. Toss to coat.
  3. Roast on top rack until golden brown and tender, about 14-16 minutes.
  4. Remove from oven and heat broiler to high. Sprinkle with panko and Parmesan. Broil until browned and crispy, 2-5 minutes, being careful not to burn.
  5. Sprinkle any toasted cheese that fell around the zucchini on top.
