Ingredients
- 1 zucchini
- Olive oil
- 1/2 tsp dried basil
- 1/4 tsp dried rosemary
- 1/4 tsp dried oregano
- 1/4 tsp garlic powder
- 1/8 tsp cayenne
- 1/8 tsp ground fennel
- Salt and pepper, to taste
- 1/4 cup Panko
- 1/4 cup Parmesan cheese
Directions
- Adjust rack to top position and preheat oven to 450°. Trim and slice zucchini crosswise in 1/2" thick rounds.
- Place zucchini on a baking sheet with a large drizzle of olive oil, basil, rosemary, oregano, garlic powder, cayenne, fennel, salt and pepper. Toss to coat.
- Roast on top rack until golden brown and tender, about 14-16 minutes.
- Remove from oven and heat broiler to high. Sprinkle with panko and Parmesan. Broil until browned and crispy, 2-5 minutes, being careful not to burn.
- Sprinkle any toasted cheese that fell around the zucchini on top.
