Barramundi with Zesty Cilantro Sauce

Ingredients

  • 1/2 oz cilantro
  • 1 lemon
  • 1 clove garlic
  • 2 tsp cumin, divided
  • 4 Tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • Chili flakes, to taste
  • 20 oz barramundi

Directions

  1. Finely chop cilantro. Zest and quarter lemon. Peel and mince or grate garlic.
  2. In a small bowl, combine cilantro, 1 tsp cumin, lemon zest to taste, olive oil, a big squeeze of lemon juice, and garlic. Add salt, pepper, and chili flakes to taste.
  3. Pat barramundi dry with paper towels. Season all over with remaining 1 tsp cumin, salt and pepper.
  4. Heat a drizzle of oil in a large, preferably nonstick, pan over meddium-high heat. Add barramundi and cook until opaque and cooked through, 4-6 minutes per side.
  5. Serve barramundi topped with cilantro sauce and remaining lemon wedges on the side.
