Al Pastor Pulled Pork Tacos
with Pineapple Salsa
The HelloFresh take on Vicki's favorite type of taco.
Ingredients
- Red onion, thinly sliced + 2 Tbsp minced
- 8 oz pulled pork
- 1 Tbsp Tex-Mex Paste
- 1/2 Tbsp garlic powder
- 3/4 tsp cumin
- 3/4 tsp chili powder
- 1/2 cup pineapple, drained, roughly chopped, and juice reserved
- 1/2 tsp sugar
- 1/2 cup cilantro, finely chopped
- Lime, quartered
- 6 small flour tortillas
- Salt
- Pepper
- Cooking oil
Directions
- Heat a drizzle of oil in a large pan over medium-high heat. Add sliced onion and season with salt and pepper. Cook, stirring, until just softened, 3-4 minutes.
- Add another drizzle of oil and add pork, Tex-Mex paste, garlic powder, cumin, chili powder, pineapple juice, sugar, salt, and pepper. Cook, breaking meat into pieces, until pork is cooked through, 2-3 minutes. Remove from heat.
- Meanwhile, in a small bowl, combine minced onion, chopped pineapple, cilantro, and a squeeze of lime juice. Season with salt and pepper.
- Wrap tortillas in damp paper towels and microwave about 30 seconds.
- Divide torillas between plates, fill with pork filling and pineapple salsa, and serve with any remaining lime wedges.
