Tex-Mex Paste

An interpretation of the HelloFresh Tex-Mex Paste.

Ingredients

  • 4 cloves garlic
  • 6 chipotle chiles
  • 1/2 white onion, roughly chopped
  • 3.5 oz fire roasted tomatoes
  • 3/4 tsp rice vinegar
  • 1 tsp tomato paste
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • 1/4 tsp coriander
  • 1/4 tsp paprika
  • 1/4 tsp oregano
  • 1/4 tsp garlic powder
  • 1 tsp cocoa powder
  • 3/4 tsp sugar
  • 3/4 tsp salt

Directions

  1. Remove seeds, stems, and veins from chiles and lightly toast them in a dry pan on medium heat for 2-3 minutes. Place in a small bowl and cover completely with boiling water. Cover the bowl with plastic wrap or a tight-fitting lid and let chiles steep 15-20 minutes.
  2. Meanwhile, drizzle garlic in olive oil, wrap in foil, and roast in oven at 425° for about 15-20 minutes.
  3. When chiles are softened, drain and add them to a blender with onion and fire roasted tomatoes and blend until smooth.
  4. Pour puree into a small saucepan and add remaining ingredients. Bring to a simmer and stir for about 15 minutes.
  5. Scoop by the tablespoon into an ice cube tray, freeze, and store in a plastic bag for use as needed.
