Tex-Mex Paste
An interpretation of the HelloFresh Tex-Mex Paste.
Ingredients
- 4 cloves garlic
- 6 chipotle chiles
- 1/2 white onion, roughly chopped
- 3.5 oz fire roasted tomatoes
- 3/4 tsp rice vinegar
- 1 tsp tomato paste
- 1/2 tsp chili powder
- 1/4 tsp cumin
- 1/4 tsp coriander
- 1/4 tsp paprika
- 1/4 tsp oregano
- 1/4 tsp garlic powder
- 1 tsp cocoa powder
- 3/4 tsp sugar
- 3/4 tsp salt
Directions
- Remove seeds, stems, and veins from chiles and lightly toast them in a dry pan on medium heat for 2-3 minutes. Place in a small bowl and cover completely with boiling water. Cover the bowl with plastic wrap or a tight-fitting lid and let chiles steep 15-20 minutes.
- Meanwhile, drizzle garlic in olive oil, wrap in foil, and roast in oven at 425° for about 15-20 minutes.
- When chiles are softened, drain and add them to a blender with onion and fire roasted tomatoes and blend until smooth.
- Pour puree into a small saucepan and add remaining ingredients. Bring to a simmer and stir for about 15 minutes.
- Scoop by the tablespoon into an ice cube tray, freeze, and store in a plastic bag for use as needed.
