Summer Squash

Even people who don't like zucchini will love this recipe.

Ingredients

  • 3 cups yellow summer squash, sliced
  • 3 cups zucchini, sliced
  • Butter
  • 1 onion, chopped
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 carrot, grated
  • 1 package bread stuffing mix

Directions

  1. Saute squash and zucchini in butter with onion until just tender.
  2. Add soup, sour cream, and carrot.
  3. Prepare stuffing mix as directed on package.
  4. Place half of the stuffing in a casserole. Top with squash mixture. Then top with remaining stuffing.
  5. Bake at 350° for 20-25 minutes until bubbly.
