Roasted Cauliflower

with Pine Nuts

Ingredients

  • 4 lbs. cauliflower (any color, about 2 heads)
  • 1/2 Tbsp rosemary (chopped fresh)
  • 1/4 cup olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1/4 cup pine nuts
  • 2 tsp. garlic, minced
  • 1/4 cup breadcrumbs, toasted

Directions

  1. Preheat over to 400°.
  2. Place cauliflower in roasting pan and toss with rosemary and next 3 ingredients. Roast for 20 minutes.
  3. Add pine nuts and garlic, toss to combine. Roast 10 minutes, rotate pan, and roast 10 minutes more or until golden brown. Sprinkle with breadcrumbs, and serve warm.

Serves 8

Recommendation: while cauliflower is roasting, toast a slice of bread and place in blender until crumbly. Sprinkle on top of cauliflower when done.
