Gingered Lime Carrots

A quick and easy veggie from Wendy

Ingredients

  • 1 lb carrots, cut into 1/2-inch slices
  • 1 Tbsp water
  • 1 Tbsp lime juice
  • 1 Tbsp butter or margarine
  • 1 Tbsp honey
  • 1 tsp. grated lime peel
  • 1/4 tsp. ground ginger or 1 tsp. grated fresh ginger-root
  • Lime slices

Directions

  1. In a 1-1/2 qt. microwave-safe bowl, combine carrots and water. Cover and cook on high for 7-8 minutes or until crisp-tender stirring once. Let stand for 5 minutes.
  2. Meanwhile, in a small bowl, combine lime juice, butter, honey, peel, and ginger. Cover and microwave on high for 1 minute.
  3. Drain carrots. Stir in the lime mixture. Cover and cook on high for 1 minute. Garnish with lime.
