Stuffed Pepper Soup
Quick and easy, but can also be healthy!
Ingredients
- 2 pounds ground beef (can substitute with ground turkey or chicken)
- 1 can (28 oz) tomato sauce
- 1 can (28 oz) diced tomatoes, undrained
- 2 cups cooked converted or long grain white rice (can substitute brown)
- 2 cups chopped green pepper
- 2 beef bouillon cubes
- 1/4 cup packed brown sugar
- 2 tsp. salt
- 1 tsp. pepper
Directions
- In a large saucepan or Dutch oven, brown beef. Drain.
- Add remaining ingredients; bring to a boil.
- Reduce heat. Cover and simmer for 30-40 minutes or until peppers are tender.
Yield: 10 servings
