Stuffed Pepper Soup

Quick and easy, but can also be healthy!

Ingredients

  • 2 pounds ground beef (can substitute with ground turkey or chicken)
  • 1 can (28 oz) tomato sauce
  • 1 can (28 oz) diced tomatoes, undrained
  • 2 cups cooked converted or long grain white rice (can substitute brown)
  • 2 cups chopped green pepper
  • 2 beef bouillon cubes
  • 1/4 cup packed brown sugar
  • 2 tsp. salt
  • 1 tsp. pepper

Directions

  1. In a large saucepan or Dutch oven, brown beef. Drain.
  2. Add remaining ingredients; bring to a boil.
  3. Reduce heat. Cover and simmer for 30-40 minutes or until peppers are tender.

Yield: 10 servings
