Minestrone Soup

Ingredients
- 1/2 lb. Italian sausage, sliced
- 1 Tbsp. olive oil
- 1 cup diced onions
- 1 clove garlic or garlic salt
- 1 cup sliced carrots
- 1 tsp. basil
- 2 small zucchini, sliced
- 1 (1 lb.) can Italian tomatoes (undrained)
- 2 (10 oz.) cans beef bouillon
- 2 cups shredded cabbage
- 1 (1 lb.) can white kidney beans (undrained)
- 1/2 cup rice
- 1/2 cup red wine
- Salt and pepper, to taste
- Grated Parmesan cheese
- Chopped parsley
Directions
- Put sausage in olive oil in a large pot. Add onion, garlic, carrots, and basil. Cook 5 minutes.
- Add zucchini, tomatoes, bouillon, and cabbage. Bring to a boil.
- Reduce heat and simmer 1 hour.
- Add beans, rice and wine. Cook on low for 20 minutes. Add salt and pepper if needed.
- Garnish with Parmesan cheese and parsley.
