Crab Bisque

Christmas Eve Supper - Go light on the cream or John may miss the Christmas Eve Service.

Ingredients

  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 1/4 cup butter
  • 1/4 cup flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/3 cup chicken broth
  • 1/2 tsp. seasoned salt
  • 3-1/4 cup light cream or milk
  • 1/2 lb. crab
  • 2 dashes hot pepper sauce
  • 2 Tbsp. dry sherry
  • Parsley

Directions

  1. In a large saucepan, cook celery and onion in butter till vegetables are tender but not brown.
  2. Stir in flour, salt and pepper into broth. Add seasoned salt.
  3. Stir vegetable mixture; stir in cream. Cook and stir till mixture is thickened and bubbly; cook and stir one minute more.
  4. Add crab, hot pepper sauce, and dry sherry and heat through.
  5. Ladle the bowls and sprinkle with parsley.

Serves 6
