Crab Bisque
Christmas Eve Supper - Go light on the cream or John may miss the Christmas Eve Service.
Ingredients
- 1/2 cup diced celery
- 1/2 cup diced onion
- 1/4 cup butter
- 1/4 cup flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/3 cup chicken broth
- 1/2 tsp. seasoned salt
- 3-1/4 cup light cream or milk
- 1/2 lb. crab
- 2 dashes hot pepper sauce
- 2 Tbsp. dry sherry
- Parsley
Directions
- In a large saucepan, cook celery and onion in butter till vegetables are tender but not brown.
- Stir in flour, salt and pepper into broth. Add seasoned salt.
- Stir vegetable mixture; stir in cream. Cook and stir till mixture is thickened and bubbly; cook and stir one minute more.
- Add crab, hot pepper sauce, and dry sherry and heat through.
- Ladle the bowls and sprinkle with parsley.
