Scallops

Another outlaw recipe, as we had no seafood recipes, but we do love our outlaw recipes.

Ingredients

  • 1/4 cup butter
  • 2 Tbsp. flour
  • 1 tsp. prepared mustard
  • 1 tsp. salt
  • 1 cup milk
  • 2 cups scallops
  • 2 Tbsp. butter
  • 1/2 cup fresh breadcrumbs
  • Lemon juice (optional)
  • Parsley (optional)

Directions

  1. Combine butter, flour, mustard, salt, and milk to make sauce.
  2. Cook scallops in simmering water briefly.
  3. Add to sauce and place in shallow baking dish.
  4. Melt butter and combine with breadcrumbs. Put on top of casserole.
  5. Bake at 400° for 10 minutes, uncovered.
  6. If desired, add lemon juice to the sauce and top with parsley.
