Pan-Seared Garlic Salmon

Simple but delicious

Ingredients

  • 2 salmon fillets
  • Salt and Pepper (to taste)
  • Pan-searing flour
  • 1 Tbsp. olive oil
  • Pasta of choice
  • 1 Tbsp. basting oil (optional, with garlic)
  • 3 Tbsp. butter or margarine
  • Garlic

Directions

  1. Season salmon with salt and pepper. Dust both sides with pan-searing flour; pat off excess.
  2. Heat olive oil in large pan on Med-High until oil faintly smokes; add salmon. Turn over when salmon is golden brown on bottom, 3-4 min.
  3. In the meantime, boil water and add pasta.
  4. When salmon has browned, reduce heat to Med. Cook 4-5 min. Add basting oil and 1 Tbsp. butter and baste 1-3 min. Transfer to plate and let cool.
  5. Drain pasta. Melt rest of butter and garlic in separate pan (careful not to sauté too long). To serve: cover bottom of plate with pasta, place salmon on top and then pour garlic and butter mixture over top.
