Tuna Salad

From the Wegman's elbow macaroni box. I usually double it. The kids and Wendy like the peas, but not the onion!

Ingredients

  • 8 oz. (2 cups) elbow macaroni
  • 1/2 Tbsp. olive oil
  • 4 tsp. lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup sliced green onion (optional)
  • 3/4 cup mayonnaise
  • 1 (12 oz.) can tuna, drained
  • 1/2 tsp. dry dill weed
  • 1/2 cup frozen peas (optional)

Directions

  1. Cook elbow macaroni according to package directions; drain and rinse in cold water.
  2. In a large bowl, toss elbows with olive oil, lemon juice, salt and pepper. Add remaining ingredients and mix well.
  3. Chill and serve on lettuce leaves.
