Potato Salad

No one ever got staph food poisoning from this one because of all the vinegar. Mom always made the best potato salad and it was one of Dick's favorites.

Ingredients

  • 2 lbs. potatoes (about 6 medium)
  • 1/4-1/2 cup Italian dressing
  • 1/3 cup onion
  • 2 stalks celery
  • 1 cup mayonnaise, or more
  • 1 tsp. mustard
  • 4 hard cooked eggs, chopped
  • Salt and pepper to taste

Directions

  1. Cook unpeeled potatoes in boiling water till tender. Drain. When cool, peel and cube.
  2. In a large bowl, combine potatoes and Italian dressing. Set aside
  3. While potatoes marinate, chop onions and celery. Add to potato mixture along with mayo, mustard, eggs, salt and pepper.
  4. Toss, cover and chill before serving.

Makes 8-10 servings
