Crispy Parmesan Chicken

The light, crunchy topping is full of flavor.

Ingredients

  • 1/2 cup panko
  • 1/2 cup Parmesan cheese
  • 2 tsp smoked paprika
  • Olive oil, to taste
  • Salt and pepper, to taste
  • 20 oz chicken cutlets
  • 1/4 cup sour cream
  • Scallion greens, optional
  • Lemon, optional

Directions

  1. Preheat oven to 425°. In a small bowl, combine panko, Parmesan, paprika, a large drizzle of oil, salt, and pepper.
  2. Pat chicken dry with paper towels. Season all over with salt and pepper. Place on a baking sheet and spread tops with sour cream. Mound with panko mixture, pressing to adhere.
  3. Roast until chicken is cooked through, 15-20 minutes. Serve with thinly sliced scallion greens and lemon wedges if desired.
