Crispy Parmesan Chicken
The light, crunchy topping is full of flavor.
Ingredients
- 1/2 cup panko
- 1/2 cup Parmesan cheese
- 2 tsp smoked paprika
- Olive oil, to taste
- Salt and pepper, to taste
- 20 oz chicken cutlets
- 1/4 cup sour cream
- Scallion greens, optional
- Lemon, optional
Directions
- Preheat oven to 425°. In a small bowl, combine panko, Parmesan, paprika, a large drizzle of oil, salt, and pepper.
- Pat chicken dry with paper towels. Season all over with salt and pepper. Place on a baking sheet and spread tops with sour cream. Mound with panko mixture, pressing to adhere.
- Roast until chicken is cooked through, 15-20 minutes. Serve with thinly sliced scallion greens and lemon wedges if desired.
