Creamy Baked Chicken Breasts

This is an outlaw recipe, but good comfort food. The Breuhaus girls call this "Chicken Goop."

Ingredients

  • 4 whole boneless chicken breasts
  • 8 slices Swiss cheese
  • 1 can cream of chicken soup
  • 1/4 cup dry white wine or water
  • 2 cups seasoned stuffing mix
  • 1/4 cup butter or margarine, melted

Directions

  1. Arrange chicken in a shallow 7"x11" or 9"x13" baking dish. Top each piece with a slice of cheese.
  2. Stir together soup and wine. Spoon evenly over chicken.
  3. Coarsely crush stuffing mix and sprinkle over chicken. Drizzle with butter.
  4. Bake, uncovered, at 350° for 50-55 minutes or until meat in thickest portion is no longer pink.

Makes 6-8 servings
