Chicken Rice Casserole
with Potato Chips
When your freezer breaks down and you still have more darn chicken! - Thanks Mom!
Ingredients
- 2 cups cooked diced chicken
- 1/2 cup mayonnaise
- 1 Tbsp. lemon juice
- 1/2 box Chicken Rice-A-Roni, cooked as per box instructions
- 3/4 cup chicken broth (or bouillon and water)
- Salt, to taste
- Grated onion
- 1 can cream of chicken soup
- 1/2 cup or more water chestnuts, drained
- Potato chips, crushed
Directions
- Mix all ingredients except potato chips and place in a casserole.
- Add crushed chips on top.
- Bake at 350° for 30-40 minutes.
