Sweet Potatoes
"They taste like cake," say the Chatelle boys.
Ingredients
- 3 lbs. sweet potatoes
- 2 eggs
- 3/4 cup sugar
- 1/2 cup butter
- 1/2 cup evaporated milk
- 1 tsp. vanilla
Topping
- 1 cup brown sugar
- 1/3 cup melted butter
- 1/4 tsp. baking powder
- 1/2 cup flour
- 1/4 tsp. baking sugar
- 1 cup chopped pecans
Directions
- Peel, chunk and boil potatoes for 15 minutes. Drain and mash.
- Mix with all ingredients until creamy.
- Place into 9x12-in. pan and cover with topping (which I never use unless it's Thanksgiving).
Topping
- Mix until crumbly and place on top of potatoes.
- Bake at 325° for 30 minutes.
