Sweet Potatoes

"They taste like cake," say the Chatelle boys.

Ingredients

  • 3 lbs. sweet potatoes
  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup butter
  • 1/2 cup evaporated milk
  • 1 tsp. vanilla

Topping

  • 1 cup brown sugar
  • 1/3 cup melted butter
  • 1/4 tsp. baking powder
  • 1/2 cup flour
  • 1/4 tsp. baking sugar
  • 1 cup chopped pecans

Directions

  1. Peel, chunk and boil potatoes for 15 minutes. Drain and mash.
  2. Mix with all ingredients until creamy.
  3. Place into 9x12-in. pan and cover with topping (which I never use unless it's Thanksgiving).

Topping

  1. Mix until crumbly and place on top of potatoes.
  2. Bake at 325° for 30 minutes.
