Sweet Potato Casserole

Mary Jane gave Ellen this recipe as an alternative to the squash Ellen made every Thanksgiving. Sweet potatoes have never tasted so good!

Ingredients

  • Enough sweet potatoes for 2 cups mashed
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 cup milk
  • 1/4 cup butter, softened

Topping

  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1/4 cup melted butter
  • 1 cup chopped pecans

Directions

  1. Bake sweet potatoes at 450&176; for 1 hour.
  2. Scoop potatoes from skin and combine with other ingredients. Place in a large casserole dish.
  3. Combine topping ingredients and place on top of casserole.
  4. Cover and bake at 275&176; for 40 minutes. Uncover and cook for 10 minutes.

Can be prepared the day before.
