Sweet Potato Casserole
Mary Jane gave Ellen this recipe as an alternative to the squash Ellen made every Thanksgiving. Sweet potatoes have never tasted so good!
Ingredients
- Enough sweet potatoes for 2 cups mashed
- 1/2 cup sugar
- 2 eggs
- 1 tsp. vanilla
- 1/2 cup milk
- 1/4 cup butter, softened
Topping
- 1/2 cup brown sugar
- 1/3 cup flour
- 1/4 cup melted butter
- 1 cup chopped pecans
Directions
- Bake sweet potatoes at 450&176; for 1 hour.
- Scoop potatoes from skin and combine with other ingredients. Place in a large casserole dish.
- Combine topping ingredients and place on top of casserole.
- Cover and bake at 275&176; for 40 minutes. Uncover and cook for 10 minutes.
Can be prepared the day before.
