Quick & Easy Garlic Mashed Potatoes

Ingredients
- 5 Yukon Gold Potatoes, diced into 1/2-inch cubes
- 2 cloves Garlic
- 2 Tbsp butter
- Milk (optional)
- Salt and pepper, to taste
Directions
- Place potatoes in a medium pot with a large pinch of salt and enough water to cover by 2 inches. Bring to a boil and cook until tender, about 12 minutes.
- Reserve 1/2 cup cooking liquid, then drain and return to pot. Meanwhile, peel garlic, wrap in a small piece of foil, and place on a baking sheet. Roast on top rack of oven until garlic is soft, 10-15 minutes.
- Once potatoes are softened, add garlic and butter to pot. Mash, adding a splash of reserved cooking liquid (or milk, if you have it on hand), until creamy and smooth. Season generously with salt and pepper.
