Make Ahead Potatoes
From Mike's mother - Once you bring these to a party, you'll be asked to bring them for the rest of your life, so invest in a good potato peeler. Also, try them with buttermilk.
Ingredients
- 10 potatoes, peeled and quartered
- 1 stick butter
- 8 oz. cream cheese
- Just less than 1 cup scalded milk
- Salt and pepper, to taste
- Breadcrumbs
Directions
- Boil potatoes until tender and drain.
- Add butter, cream cheese, milk, salt and pepper. Mix with hand mixer until smooth.
- Pour into a 9x13-in. pan. Top with thin slices of butter and dust with breadcrumbs. Cover with waxed paper and foil and refrigerate the day before.
- Reheat for 30 minutes at 350° before serving.
