Herbed Potato Packs
These foil pouches are easy to throw on the grill as a side for all of your summertime favorites.
Ingredients
- 2 lbs. fingerling potatoes
- 1 Tbsp olive oil
- 1 Tbsp butter, melted
- 2 garlic cloves, minced
- 1 tsp. salt
- 2 tsp. minced fresh thyme
- 1/2 tsp. coarsely ground pepper
Directions
- Pierce potatoes with a fork. Place in a large microwave-safe dish. Cover and microwave for 4-7 minutes or until crisp-tender; stirring halfway.
- Add the remaining ingredients. Toss to coat.
- Place potatoes onto a sheet of heavy-duty foil. Fold around potatoes and seal tightly.
- Grill, covered, over medium-high heat for 6-9 minutes on each side or until potatoes are tender.
