Herbed Potato Packs

These foil pouches are easy to throw on the grill as a side for all of your summertime favorites.

Ingredients

  • 2 lbs. fingerling potatoes
  • 1 Tbsp olive oil
  • 1 Tbsp butter, melted
  • 2 garlic cloves, minced
  • 1 tsp. salt
  • 2 tsp. minced fresh thyme
  • 1/2 tsp. coarsely ground pepper

Directions

  1. Pierce potatoes with a fork. Place in a large microwave-safe dish. Cover and microwave for 4-7 minutes or until crisp-tender; stirring halfway.
  2. Add the remaining ingredients. Toss to coat.
  3. Place potatoes onto a sheet of heavy-duty foil. Fold around potatoes and seal tightly.
  4. Grill, covered, over medium-high heat for 6-9 minutes on each side or until potatoes are tender.
