Crispy Baked Sweet Potato Fries
Found at Cookie and Kate, these fries are the perfect nutritious and crunchy side or snack.
Ingredients
- 2 lbs sweet potatoes
- 1 Tbsp cornstarch, divided
- 1/2 tsp fine sea salt, divided
- 2 Tbsp extra-virgin olive oil, divided
- Black pepper
- Cayenne pepper (1/4 tsp recommended)
- Garlic powder
Directions
- Preheat the oven to 425°. Line two large baking sheets with parchment paper.
- Peel sweet potatoes and slice them about 1/4" wide and 1/4" thick. Distribute evenly onto baking sheets and sprinkle with cornstarch and salt (half per tray). Toss until fries are lightly coated. Drizzle with olive oil (half per tray) and toss until evenly coated and no powdery spots remain.
- Arrange fries in a single layer and don't overcrowd or they will not crisp.
- Bake for 20 minutes, then flip fries over and return pans to the oven, rotating trays and swapping racks. Bake for 10 to 18 more minutes, or until the fries are crispy, being careful not to burn them.
- Toss fries with seasonings, to taste.
