Stuffed Shells

Christmas dinner at the Chatelle household. If you are one of the chosen, you may get the leftovers.

Ingredients

  • 1 box giant shells (about 44 shells)
  • 2 eggs
  • 1 lb. ricotta cheese
  • 1/2 cup mozzarella cheese, grated
  • 1/2 cup Parmesan cheese, grated
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Directions

  1. Cook shells as directed on package. Drain and rinse thoroughly with cold water. Shake water from shells and separate.
  2. In a small bowl, beat eggs. Combine with cheeses, salt and pepper.
  3. Fill each shell with cheese mixture.
  4. Pour a layer of sauce into the bottom of a casserole dish, place shells over sauce and then add another layer of sauce on top.
  5. Cover with foil and bake at 350° for 30-35 minutes.

*If you don't want to make them right away, place shells on a cookie sheet to freeze and place in plastic bag when frozen.
