Lemon Noodles

Good with fish or seafood.

Ingredients

  • 1 lb. spaghetti
  • 1/4 lb. butter
  • 1 pint sour cream
  • Juice of one juicy lemon (or bottled lemon juice, to taste)
  • 1 tsp. grated lemon peel
  • Pepper
  • 1/4 cup minced parsley
  • Parmesan cheese, to taste

Directions

  1. Preheat oven to 400°
  2. Cook the noodles in boiling water. Drain and put in baking dish.
  3. Melt butter in a small saucepan. Remove from heat and stir in sour cream, lemon juice, and lemon peel.
  4. Pour over pasta, toss and bake 20-25 minutes.
  5. Remove from oven, sprinkle on lots of pepper, minced parsley and Parmesan cheese. Toss and eat.
