John's Mac & Cheese

Ingredients
- 2 lbs elbow mac
- 1/4 cup butter
- 1/4 cup flour
- 1/4 tsp. dried thyme
- 1/4 tsp. cayenne
- 1/8 tsp. white pepper
- 3 cups milk
- 1 pinch nutmeg
- 1/4 tsp. Worcestershire
- 1 tsp. salt
- 1 cup sharp cheddar
- 1 cup Gruyere
- 1 cup Gouda
- 1 tsp. Dijon mustard
- 1/2 cup Panko
- 1 Tbsp. butter
Directions
- Preheat oven to 400°. Melt butter and add flour. Stir 3-4 minutes. Add thyme, cayenne, and white pepper. Stir 1 minute.
- Whisk in half of milk, then the rest and bring to a simmer. Add nutmeg, Worcestershire, and salt. Simmer 8 minutes.
- Mix together cheeses and add all but 1/3 cup to pan. Add mustard.
- Pour mac and cheese into a baking dish and top with remaining cheese, Panko, and butter. Bake for 20 minutes or until heated through and browned on top.
