John's Mac & Cheese

Ingredients

  • 2 lbs elbow mac
  • 1/4 cup butter
  • 1/4 cup flour
  • 1/4 tsp. dried thyme
  • 1/4 tsp. cayenne
  • 1/8 tsp. white pepper
  • 3 cups milk
  • 1 pinch nutmeg
  • 1/4 tsp. Worcestershire
  • 1 tsp. salt
  • 1 cup sharp cheddar
  • 1 cup Gruyere
  • 1 cup Gouda
  • 1 tsp. Dijon mustard
  • 1/2 cup Panko
  • 1 Tbsp. butter

Directions

  1. Preheat oven to 400°. Melt butter and add flour. Stir 3-4 minutes. Add thyme, cayenne, and white pepper. Stir 1 minute.
  2. Whisk in half of milk, then the rest and bring to a simmer. Add nutmeg, Worcestershire, and salt. Simmer 8 minutes.
  3. Mix together cheeses and add all but 1/3 cup to pan. Add mustard.
  4. Pour mac and cheese into a baking dish and top with remaining cheese, Panko, and butter. Bake for 20 minutes or until heated through and browned on top.
