Grandma 'Rene's Spaghetti Sauce

Grandma 'Rene didn't have a recipe for this and Mom's recipe was just a list of spices that were used. This recipe was created on the job and the amounts are purely approximate. Have fun...you won't ruin it.

Ingredients

  • Olive oil (Grandma used pork fat)
  • 2 cloves garlic
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup green pepper, chopped
  • 2 (6 oz.) cans tomato paste
  • 2 (28 oz.) cans whole tomatoes
  • Sugar, to taste
  • Bay leaf
  • Marjoram
  • Garlic powder
  • Oregano
  • Celery seed
  • Pepper seed
  • Salt and pepper
  • Parsley

  • *All spices to taste

Directions

  1. Cover the bottom of a pan with olive oil. Saute garlic, onion, celery, and green pepper until tender.
  2. Stir in tomato paste and whole tomatoes. Add sugar and spices.
  3. Cook, uncovered, for about an hour or until it taste the way you like it.
  4. Grandma would add uncooked meatballs and cook both sauce and meatballs until the meatballs were done.
