Southern-Style Cheeseburgers

Originally part of an EveryPlate delivery, the cheese on these burgers is delicious! It is also recommended as a grilled cheese filling, a Ritz cracker spread or as a dip for veggies.

Ingredients

  • 1 Thai chili pepper
  • 1 Roma tomato
  • 1 red onion
  • 1 cup Cheddar cheese
  • 2 Tbsp. mayonnaise
  • 2 Tbsp. sour cream
  • 1 lb ground beef*
  • Salt
  • Pepper
  • 4 tsp. vegetable oil
  • 1 Tbsp. butter
  • 2 potato hamburger buns

Directions

  1. Finely chop chili. Slice tomato into thin rounds. Peel and halve onion crosswise. Cut one half into thin rounds. Finely chop or grate remaining half until you have 1 tsp.
  2. In a small bowl, combine cheddar, mayonnaise, sour cream, chopped onion, and as much chili as you'd like. Gently form beef into 1/2-inch-thick patties, each slightly wider than a burger bun. Season all over with salt and pepper.
  3. Heat a drizzle of oil in a large pan over high heat. Add sliced onion and cook until charred, 1-2 minutes per side. Carefully remove from pan and set aside.
  4. Add patties to same pan and cook until browned on the first side, about 3 minutes. Flip patties and top evenly with cheese mixture. Cover pan and cook until cheese has melted and patties are cooked to desired doneness, 2-3 minutes.
  5. Meanwhile, melt butter in microwave, then brush onto cut sides of buns. Toast buns in 425° oven until golden, 3-4 minutes. Fill buns with patties and cheese mixture, and top with as many tomato and onion rounds as you like.

Makes about 4 patties

*You can also substitute ground turkey for ground beef, but I would recommend adding about 1 tsp garlic powder, 1/2 tsp onion powder, and 1/2 tsp paprika to the meat before making into patties.

**We usually make these on the grill instead of on the stove. Once the burgers are just about done, we add the cheese and close the grill until the cheese is melted.
