Italian Meatballs

These are Vicki's favorite.

Ingredients

  • 4 bread slices
  • 1/2 cup water
  • 2 eggs
  • 1 lb. ground beef
  • 1/4 cup grated Parmesan cheese
  • 2 Tbsp. snipped parsley
  • 1 tsp. salt
  • 1/4 tsp. dried oregano, crushed
  • Dash of pepper
  • 2 Tbsp. salad oil
  • Sauce

Directions

  1. Soak bread slices in water for 2 to 3 minutes. Add eggs and mix well.
  2. Mix with ground beef, Parmesan, parsley, salt, oregano, and pepper.
  3. With wet hands, form meat mixture into small balls (about 24).
  4. Brown slowly in hot salad oil.
  5. Add meatballs to sauce. Simmer, loosely covered, for 30 minutes.
