Vodka Red Cream Sauce

Ingredients

  • 1/4 cup olive oil
  • 1 Spanish onion, medium
  • 3 cloves garlic, finely chopped
  • 1/2 tsp red pepper flakes
  • 1-1/2 tsp dried oregano
  • 1 cup vodka
  • 2 (28 oz) whole tomatoes
  • Salt
  • Pepper
  • 3 Tbsp fresh oregano
  • 1 cup heavy cream
  • 1 cup grated Pecorino Romano

Directions

  1. Preheat oven to 375°. Saute onion, garlic, red pepper flakes, and oregano in olive oil until the onion is translucent.
  2. Add vodka and simmer until reduced by half. Make slurry and add canned tomatoes, salt and pepper.
  3. Bake in oven, covered for 1-1/2 hours. Remove from oven and use immersion blender to make smooth.
  4. Add oregano, cream, and Pecorino Romano. Stir to blend.
