Vodka Red Cream Sauce

Ingredients
- 1/4 cup olive oil
- 1 Spanish onion, medium
- 3 cloves garlic, finely chopped
- 1/2 tsp red pepper flakes
- 1-1/2 tsp dried oregano
- 1 cup vodka
- 2 (28 oz) whole tomatoes
- Salt
- Pepper
- 3 Tbsp fresh oregano
- 1 cup heavy cream
- 1 cup grated Pecorino Romano
Directions
- Preheat oven to 375°. Saute onion, garlic, red pepper flakes, and oregano in olive oil until the onion is translucent.
- Add vodka and simmer until reduced by half. Make slurry and add canned tomatoes, salt and pepper.
- Bake in oven, covered for 1-1/2 hours. Remove from oven and use immersion blender to make smooth.
- Add oregano, cream, and Pecorino Romano. Stir to blend.
