Pesto
This recipe was imported from Italy by our friend Maria.
Ingredients
- 4 cups basil
- 1/4-1/2 cup olive oil
- 1/2 cup Parmesan / Romano cheese
- 1 Tbsp. butter, melted
- 1 tsp. salt
- Good grinding pepper
- 4 clove garlic
- 1 cup pine nuts
Directions
- Grind basil in a food processor a little at a time to make sure it's all ground evenly.
- Combine with olive oil, cheese, butter, salt and pepper in a large bowl.
- Grind garlic and pine nuts separately and add to other ingredients. Mix well.
- Fill 3-4 canning jars, leaving space at the top. Add olive oil to cover pesto at top of jar. Cover jars, label, and freeze.
- Thaw before use and add in recipe as is or add oil and toss with pasta.
