Pesto

This recipe was imported from Italy by our friend Maria.

Ingredients

  • 4 cups basil
  • 1/4-1/2 cup olive oil
  • 1/2 cup Parmesan / Romano cheese
  • 1 Tbsp. butter, melted
  • 1 tsp. salt
  • Good grinding pepper
  • 4 clove garlic
  • 1 cup pine nuts

Directions

  1. Grind basil in a food processor a little at a time to make sure it's all ground evenly.
  2. Combine with olive oil, cheese, butter, salt and pepper in a large bowl.
  3. Grind garlic and pine nuts separately and add to other ingredients. Mix well.
  4. Fill 3-4 canning jars, leaving space at the top. Add olive oil to cover pesto at top of jar. Cover jars, label, and freeze.
  5. Thaw before use and add in recipe as is or add oil and toss with pasta.
