Lemon Bars

Ingredients

  • 1 cup butter, softened
  • 2 cups sugar, divided
  • 2-1/4 cups all purpose flour, divided
  • 4 eggs
  • 2 lemons, juiced (4 Tbsp)
  • 4 tsp. lemon zest
  • Confectioner's sugar

Directions

  1. Preheat oven to 350°. In a medium bowl, blend together softened butter, 2 cups flour, and 1/2 cup sugar. Press into bottom of an ungreased 9x13 pan. Bake for 15-20 minutes or until firm and golden.
  2. In another bowl, whisk together the remaining 1-1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice until fluffy.
  3. Pour mixture over the baked crust. Bake for an additional 20 minutes. The bars will firm up as they cool. Sprinkle with confectioner's sugar.

*Make another pan using limes instead of lemons and add a drop of green food coloring to make them a very pale green. After both have cooled, cut into uniform 2 inch squares and arrange in checkerboard fashion.
