Lemon Bars

Ingredients
- 1 cup butter, softened
- 2 cups sugar, divided
- 2-1/4 cups all purpose flour, divided
- 4 eggs
- 2 lemons, juiced (4 Tbsp)
- 4 tsp. lemon zest
- Confectioner's sugar
Directions
- Preheat oven to 350°. In a medium bowl, blend together softened butter, 2 cups flour, and 1/2 cup sugar. Press into bottom of an ungreased 9x13 pan. Bake for 15-20 minutes or until firm and golden.
- In another bowl, whisk together the remaining 1-1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice until fluffy.
- Pour mixture over the baked crust. Bake for an additional 20 minutes. The bars will firm up as they cool. Sprinkle with confectioner's sugar.
*Make another pan using limes instead of lemons and add a drop of green food coloring to make them a very pale green. After both have cooled, cut into uniform 2 inch squares and arrange in checkerboard fashion.
