Ginger Snaps

Found at Lovely Little Kitchen, this classic cookie recipe is one of Vicki's favorites and is perfect for the holiday season too.

Ingredients

  • 3/4 cup butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground ginger
  • additional 1/2 cup sugar for rolling (using half coarse sparkling sugar make them looks pretty)

Directions

  1. Preheat oven to 350°. Grease a baking sheet or place a sheet of parchment paper over it.
  2. Cream butter and sugar. Add egg, molasses, and mix.
  3. In a separate bowl, mix flour, salt, baking soda, cinnamon, cloves, and ginger.
  4. Gradually add dry ingredients to wet ingredients until well mixed and dough forms.
  5. Roll dough into 1-1/2 Tbsp balls, roll dough ball in sugar, and space out on baking sheet. These spread out quite a bit while baking, so try to limit it to about 12 cookies per sheet.
  6. Bake 11-13 minutes. Allow to cool slightly on the baking sheet before transfering to cooling rack.
