Chocolate Chip Cookies

Our favorite stories of making these cookies are the times when Ellen turned around and burned Wendy's arm with a hot cookie sheet, followed by Wendy turning the mixer on and getting Ellen's fingers stuck in the beaters.

Ingredients

  • 1 cup solid shortening
  • 1/2 cup butter or margarine
  • 1-1/3 cup granulated sugar
  • 1 cup packed brown sugar
  • 4 eggs
  • 1 Tbsp. vanilla
  • 1 tsp. lemon juice
  • 2 tsp. baking soda
  • 1-1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 cup rolled oats
  • 3 cups flour
  • 2 large packages chocolate chips (12 oz. each)
  • 2 cups chopped walnuts

Directions

  1. In a large mixing bowl, use a mixer on high speed to combine solid shortening, butter, granulated sugar, and brown sugar until thoroughly combined. About 5 minutes.
  2. Then beat in eggs one at a time, beating well after each addition. Add vanilla and lemon juice.
  3. In another bowl, stir together baking soda, salt, cinnamon, oats, and flour.
  4. Mix dry ingredients into creamed mixture until well combined. Mix in chocolate chips and nuts.
  5. For each cookie, drop a scant 1/4 cup of dough on a lightly greased baking sheet. Make cookies about 3 inches apart.
  6. Bake at 350° oven for 16-18 minutes or until golden brown.
  7. Transfer to wire racks to cool.
