Chocolate Chip Cookies
Our favorite stories of making these cookies are the times when Ellen turned around and burned Wendy's arm with a hot cookie sheet, followed by Wendy turning the mixer on and getting Ellen's fingers stuck in the beaters.
Ingredients
- 1 cup solid shortening
- 1/2 cup butter or margarine
- 1-1/3 cup granulated sugar
- 1 cup packed brown sugar
- 4 eggs
- 1 Tbsp. vanilla
- 1 tsp. lemon juice
- 2 tsp. baking soda
- 1-1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 cup rolled oats
- 3 cups flour
- 2 large packages chocolate chips (12 oz. each)
- 2 cups chopped walnuts
Directions
- In a large mixing bowl, use a mixer on high speed to combine solid shortening, butter, granulated sugar, and brown sugar until thoroughly combined. About 5 minutes.
- Then beat in eggs one at a time, beating well after each addition. Add vanilla and lemon juice.
- In another bowl, stir together baking soda, salt, cinnamon, oats, and flour.
- Mix dry ingredients into creamed mixture until well combined. Mix in chocolate chips and nuts.
- For each cookie, drop a scant 1/4 cup of dough on a lightly greased baking sheet. Make cookies about 3 inches apart.
- Bake at 350° oven for 16-18 minutes or until golden brown.
- Transfer to wire racks to cool.
