Mexican Wedding Cakes

A must for Christmas, they were Laurie's favorite. Wendy makes them every year.

Ingredients

  • 1 cup butter
  • 1/2 tsp. vanilla
  • 6 Tbsp. powdered sugar
  • 2 cups cake flour (all purpose minus 2 Tbsp.)
  • Chopped nuts
  • Confectioner's sugar

Directions

  1. Cream butter. Add vanilla.
  2. Sift flour and sugar together and add to butter.
  3. Add chopped nuts. Refrigerate.
  4. Shape into walnut-sized balls.
  5. Bake at 350° for 12 to 15 minutes until lightly brown.
  6. While warm, roll in confectioner's sugar.
