Mexican Wedding Cakes
A must for Christmas, they were Laurie's favorite. Wendy makes them every year.
Ingredients
- 1 cup butter
- 1/2 tsp. vanilla
- 6 Tbsp. powdered sugar
- 2 cups cake flour (all purpose minus 2 Tbsp.)
- Chopped nuts
- Confectioner's sugar
Directions
- Cream butter. Add vanilla.
- Sift flour and sugar together and add to butter.
- Add chopped nuts. Refrigerate.
- Shape into walnut-sized balls.
- Bake at 350° for 12 to 15 minutes until lightly brown.
- While warm, roll in confectioner's sugar.
