Gingerbread Cookies
If you ever feel like decorating gingerbread men, come on over because Michelle always makes tons of these and Jessica and Wendy make them come to life at Christmas. Carlie and Vicki started a tradition of making unique gingerbread shapes as well.
Ingredients
- 1 (18.25 oz.) package spice cake mix
- 3/4 cup flour
- 2 eggs
- 1/3 cup vegetable oil
- 1/3 cup molasses
- 2 tsp. ground ginger
Directions
- In a mixing bowl, combine dry cake mix, flour, eggs, oil, molasses, and ginger. Mix well. Refrigerate 30 minutes until easy to handle.
- On a floured surface, roll out dough to 1/8" thickness. Cut with cookie cutters dipped in flour. Place 2" apart on ungreased baking sheets.
- Bake at 375° for 7-10 minutes or until edges are firm and bottom is lightly browned. Remove to wire racks and cool.
- Decorate with cream cheese frosting or frosting of choice.
