Cinnamon Almond Cookie Sticks
Ray added this one to our collection. I've been told by Alexandra that they're delicious with coffee!
Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1/2 tsp. vanilla (or almond extract)
- 1 Tbsp. ground cinnamon (even better if you grind cinnamon sticks)
- 1 cup sliced almonds
- 3-1/2 cups flour
- 1 tsp. baking soda
Directions
- Cream butter and sugars until light and fluffy.
- Add in eggs and vanilla until well mixed. Add almonds.
- Combine flour, baking soda, and cinnamon. Slowly beat into butter mixture until dough is smooth and completely combined.
- Line a loaf pan with foil or wax paper. Press dough into pan. Fold foil/paper over to cover dough.
- Refrigerate for at least an hour until firm.
- Remove dough from pan and cut into 1/2 inch slices, then cut slices into thirds.
- Place slices onto greased cookie sheet, about 3 inches apart.
- Bake at 350° for 10-15 minutes until lightly browned.
- Let cool on baking sheet for 10 minutes, then remove onto cooling rack.
- Store in an airtight container.
