Chocolate Chip Ricotta Cake

Ingredients
- 1-1/4 cups sugar
- 1-3/4 cups flour, plus 2 Tbsp for combining with chocolate chips
- 2 tsp. baking powder
- 1 tsp. salt
- 3 eggs
- 15 oz. ricotta
- 3 tsp. vanilla
- 1 stick (8 Tbsp) butter, melted and slightly cooled
- 1-1/2 cup mini chocolate chips, plus 2 Tbsp for topping
- Confectioners sugar for dusting on top
Directions
- Preheat oven to 350°.
- Mix sugar, flour, baking powder, and salt in a bowl.
- In another bowl, mix eggs, ricotta, and vanilla.
- Incorporate dry ingredients into wet. Pour in semi-cooled butter and mix.
- In a separate bowl, mix mini chocolate chips with 2 Tbsp flour and fold into batter.
- Grease a spring form or round 9" pan and line bottom with parchment paper. Pour in batter.
- Bake for 45-50 minutes or until knife comes out clean. If using a cake pan, flip out, turn over. Place on plate.
