Chocolate Chip Ricotta Cake

Ingredients

  • 1-1/4 cups sugar
  • 1-3/4 cups flour, plus 2 Tbsp for combining with chocolate chips
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 3 eggs
  • 15 oz. ricotta
  • 3 tsp. vanilla
  • 1 stick (8 Tbsp) butter, melted and slightly cooled
  • 1-1/2 cup mini chocolate chips, plus 2 Tbsp for topping
  • Confectioners sugar for dusting on top

Directions

  1. Preheat oven to 350°.
  2. Mix sugar, flour, baking powder, and salt in a bowl.
  3. In another bowl, mix eggs, ricotta, and vanilla.
  4. Incorporate dry ingredients into wet. Pour in semi-cooled butter and mix.
  5. In a separate bowl, mix mini chocolate chips with 2 Tbsp flour and fold into batter.
  6. Grease a spring form or round 9" pan and line bottom with parchment paper. Pour in batter.
  7. Bake for 45-50 minutes or until knife comes out clean. If using a cake pan, flip out, turn over. Place on plate.
