Seafood Newburg

Wendy's Christmas brunch contribution.

Ingredients

  • 1/4 cup butter
  • 2 Tbsp. flour
  • 1-1/2 cup light cream
  • 3 beaten egg yolks
  • 2 (5 oz. cans) lobster or crab
  • 3 Tbsp. dry white wine
  • 2 tsp. lemon juice
  • 1/4 tsp. salt
  • Paprika

Directions

  1. Melt butter. Stir in flour and cream. Cook and stir until thick and boiling.
  2. Stir hot mixture into egg yolks. (Just a little at a time to prevent curdling.)
  3. Add remaining ingredients and cook until heated through.
  4. Serve over toast or biscuits.
