Berry Omelette
Found at BBC Good Food as a healthy Mother's Day meal.
Ingredients
- 1 large egg
- 1 Tbsp milk
- 3 pinches cinnamon
- 1/2 tsp rapeseed oil
- 1/2 cup cottage cheese
- 1 cup fresh berries, chopped (blueberries, strawberries, raspberries)
Directions
- Beat egg with milk and cinnamon.
- Heat oil in 8" non-stick frying pan. Add the egg mixture, making sure to cover the bottom of the pan. Cook about 2-3 minutes until set and golden underneath.
- You don't have to flip it over, but I like to turn it over for a few seconds, just to firm up the other side.
- Move to a plate, spread cottage cheese over top, and sprinkle with berries. Roll up and serve. (We had some trouble rolling them, so we ate them open-faced.)
If the berries are not sweet enough, add 1 tsp honey.
