Yeast Rolls
Mom says no one will make these, but just in case you want to play with yeast, it's here.
Ingredients
- 3 cups milk
- 1 cup sugar
- 1/4 lb. margarine
- 1 Tbsp. salt
- 3 packages dry yeast
- 1/2 cup warm water
- 3 eggs
- 7 cups flour (or more)
- Raisins
Icing
- 8 Tbsp margarine
- 1-1/2 cups powdered sugar
- 1/4 cup (2 oz.) cream cheese
- 1/2 tsp. vanilla
- 1/8 tsp. salt
Directions
- Scald milk. Add sugar, margarine and salt. Cool.
- Dissolve yeast in warm water.
- Add eggs and yeast to first mixture when cool.
- Gradually beat in flour with electric mixture. Mix with spoon when mixture is too stiff for mixer. (You really have to beat in flour till mixture seems to be stiff enough.) Cover. Let rise in warm place till doubled in size. (If you use a bread hook, the dough is ready when it forms a ball in the center)
- Add raisins? This part was missed in the original recipe, but who needs raisins anyway?
- Punch down dough. Divide into thirds or easily handled size. Roll on floured board, kneading and adding flour as needed. Roll into rectangles or desired shape for sweet rolls, pecan rolls, or cinnamon rolls.
Icing
- Grandma didn't really leave instructions for this part, but I assume you melt the butter and mix all of the ingredients together before spreading over the warm rolls.
