Rosemary Cheddar Muffins

These flavorful muffins barely need butter. Another recipe from Taste of Home.

Ingredients

  • 2 cups flour
  • 2-2/3 tsp baking powder
  • 2/3 tsp salt
  • 1/2 cup shredded sharp cheddar cheese
  • 1 Tbsp. minced fresh rosemary or 1 tsp dried rosemary, crushed
  • 1-1/4 cups 2% milk
  • 3 Tbsp. mayonnaise

Directions

  1. Preheat oven to 400°. Combine flour, cheese, and rosemary in a large bowl.
  2. In another bowl, combine milk and mayonnaise. Stir mayo mixture into dry ingredients until just moistened.
  3. Spoon mixture into 12 greased muffin cups and bake until lightly browned and toothpick comes out clean, 8-10 minutes.
  4. Cool 5 minutes in tray and then remove to a wire rack to finish cooling.
