Jane's Date Nut Bread

The original recipe was copied incorrectly using about a cup less flour. After many years we discovered the error, but we all preferred the stickier date bread.

Ingredients

  • 1 package chopped dates
  • 2 Tbsp. butter
  • 2 cups boiling water
  • 2 cups sugar
  • 2 eggs
  • 3-1/2 cup flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 cup chopped walnuts (optional)
  • Vanilla (to taste)

Directions

  1. Add dates and butter to boiling water. Let stand overnight in bowl covered with dish towel.
  2. Place into mixer. Add remaining ingredients. (So much of this recipe was pinch and dash! Feel free to adjust the measurements to your taste.)
  3. Bake 1 hour in 325° oven in floured and greased loaf pans.
  4. When finished, let cool slightly on rack and place loaf pans on their sides. (Don't know why, but I always do!)
  5. After about 10 minutes, gently tap bottom and sides of pan until loaf pops out onto your hand. Again, let cool completely before wrapping in waxed paper and foil. Foolproof!
