Cinnamon Sugar Pull-Apart Bread
This bread tastes as delectable as it smells when it is baking. It's tempting to devour the whole pan!
Ingredients
- 2-3/4 cup plus 2 Tbsp. flour
- 1/4 cup sugar
- 2-1/4 tsp. (1 envelope) active dry yeast
- 1/2 tsp. salt
- 2 large eggs, room temperature
- 1/3 cup whole milk
- 2 oz. unsalted butter
- 1/4 cup water
- 1 tsp. vanilla extract
Filling
- 1 cup sugar
- 2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 4 oz. unsalted butter, melted
Directions
- In large mixing bowl, whisk 2 cups flour, sugar, yeast, and salt. Set aside.
- Whisk eggs. Set aside.
- In small saucepan, melt together milk and butter until just melted. Remove from heat. Add water and vanilla. Let stand until approximately 115°-125°.
- Pour mixture into dry ingredients and mix. Add eggs and stir until incorporated. Eggs will feel soupy and it feels as though it will never come together, but keep stirring.
- Add remaining 3/4 cup flour and stir for about 2 minutes. Dough will be sticky.
- Place in greased bowl, cover and let sit until doubled (about 1 hour).
- While rising, whisk sugar, cinnamon, and nutmeg. Melt butter. Grease a 9"x5"x3" loaf pan.
- Deflate dough. Knead in 2 Tbsp flour. Cover and rest 5 minutes.
- On lightly floured surface, roll out dough (about 20"x12"). Spread butter with pastry brush. Sprinkle with sugar/cinnamon mixture.
- Slice in 6 vertical strips and stack. Slice 6 horizontal strips. Layer side by side in loaf pan.
- Place towel over top. Rest 30-45 minutes or until doubled in size.
- Bake at 350° for 30-35 minutes until golden brown. (Dark edges ensure a cooked center)
